Ingredients
2 lbs. coarse ground beef
2 onions, sliced
2 cloves garlic
½ cup oil
1 cup chopped celery
1 tsp. chili powder (adjust to taste)
1 tsp. paprika
1 tsp. dry mustard
1 large can solid pack tomatoes
2 lbs. dry pink beans
Salt, to taste

For Extra Zest
If you like a bit more flavor complexity (and who doesn’t?), toss in a pinch of these: yellow Mexican chili pepper, coriander seeds, turmeric, chili seeds, cumin seeds, fennel seeds, cloves, cinnamon, and dry ginger.

Preparation
Soak beans overnight in cold water, then drain and cover with fresh water about two inches above the beans. Simmer with onions until tender (about 4 hours). While that’s going, brown your beef and minced garlic in oil, add the remaining ingredients, and simmer for 1 hour. When the beans are ready, combine everything and let it all get cozy together for another 30 minutes.
